All work in the practising-organic vineyard is done by hand, and all fermentations rely on indigenous yeast. The grapes undergo a gentle pressing followed by fermentation in steel tanks, and a second fermentation according to the Charmat Method. A blend of 85% Lambrusco di Sorbara (vinified white), 10% Sauvignon Blanc and 5% Chardonnay, Biancospino is fresh and fruity on the nose with aromas of apple, lemon and grapefruit; the palate is lively, textured and balanced with firm length and clean, persistent finish.
